STRAWBERRY MILKSHAKE
200 ml
(3/4 cup) strawberries)
25 ml (2 Tbsp.) honey or maple syrup
500 ml (2 cups) cold milk
250 ml (1 cup) ice cream
Purée
berries in blender; add remaining ingredients, blend
until smooth.
Serve.
STRAWBERRY CREAM CHEESE SQUARES
2 1/2
cups vanilla wafer crumbs
1/3 cup butter or margarine, melted
8 ounce package cream cheese, softened
1 3/4 cups milk
3 ounces (approx.) package vanilla instant pudding
mix
1/2 tsp. grated lemon rind
2 cups sliced fresh strawberries
2 cups whipped topping
Combine
crumbs and butter, set aside 1/2 cup.
Press remaining crumb mixture into the bottom of a
buttered 9 X 13 inch pan.
Gradually add 1/2 cup milk to softened cream cheese until
well blended.
Add pudding mix, remaining milk and lemon rind. Beat 1
min.
Pour over crumb crust and cover with strawberries.
Spread whipped topping over strawberries, and top with
remaining crumbs.
Chill until firm, about 2 hours.
FROZEN YOGURT
1 tsp.
unflavoured gelatin
1/4 cup skim milk
3 cups fresh or frozen berries
2 tsp. lemon juice
3/4 cup plain low-fat yogurt
Soften
gelatin in milk in a heatproof measuring cup 5 min; set
the cup in a pan of water; stir until the gelatin
dissolves.
Purée the berries in a blender until smooth; strain into
a medium bowl; stir in lemon juice, yogurt and gelatin
mixture.
Cover with plastic wrap; place bowl in freezer and freeze
1 - 1.5 hours or until almost set; remove and whirl in a
blender until smooth; return to freezer and freeze 4
hours or until just firm.
STRAWBERRY SALAD
Serves 6
4 cups
fresh strawberries
1/4 cup vegetable oil
2 Tbsp.vinegar
1 tsp.sugar
Dash salt
1 10 oz. package fresh spinach, washed and torn
2 cups bean sprouts
1 1/2 cups sliced mushrooms
2 Tbsp.sliced green onions
Wash and
hull berries. Crush 1 cup; halve remaining berries; set
aside.
Dressing: mix crushed berries with oil, vinegar, sugar
and salt. Chill.
Combine remaining ingredients in a large bowl; add
dressing just before serving. Toss to coat thoroughly.
BARBECUE DESSERT
Skewer strawberries, pineapple chunks and kiwi fruit;
warm over coals or under a broiler; brush with honey, if
desired.
